You can see the attached pdf for the current kitchen layout. I could optionally put some insulation in there and some plywood to close it off (and may do that). The walls are insulated but the floor is not (it is on posts and open to the outside air). The fridge is actually in a pop out box that is outside of the house. Its slip-fit tub spout attaches to 1/2-inch copper tubing and is held in place with a hex-screw. Its iron-pipe size, or IPS, screws onto 1/2-inch male threaded pipe. Moen makes two different versions of tub spouts.

We do have a full basement but it has been redone (ceiling, walls, etc.) and there is no access to the sub floor from underneath the kitchen. Replacing a broken or outdated tub spout with a new Moen is a relatively simple task. The problem is that the wall is an exterior wall.
I wanted to switch to pex line and avoid drilling holes in the new cabinets. We are redoing the kitchen (new floors and cabinets) so we will be tearing everything we have out. We have our sink and our fridge on the same wall and are currently running a copper line under the cabinets and then alongside the fridge. In my opinion if you feel the clicking initially when trying to spin your spout off this will almost certainly be your situation too. I then just put a backer on the nipple and spun the brass fitting off with channel locks with ease. At times I would use pliers to brake off pieces of plastic when I wasn't sure what I was cutting into and this eventually removed all of the plastic and revealed the brass fitting on the end of the pipe nipple. After remove a piece of plastic revealing the nipple and still not sure what the problem was I continued to make additional cuts removing more plastic. These's a decent void in the spout around the nipple close to the shower wall end so this was easy.
I discovered this after I took a my oscillating saw and carefully cut into the spout making sure not to cut too deep and hit the nipple contained inside. The spout was stripped so with every turn it was NOT spinning the brass fitting off of the nipple. My spout was plastic and this type of spout has plastic grooves that fit over a brass fitting that is actually what is threaded on over the end of the pipe nipple. My spout just would spin and I could feel it clicking while spinning like something was stripping. I had the same situation that "mercadr" described exactly.
